Delicious and simple Thai peanut sauce.  Adjust to your likeness for a spicy twist.  Why buy store bought again.

Ingredients
1 can coconut milk (398 ml)
3/4 cup natural unsweetend peanut butter
1/4 cup Thai red curry paste
1/2 tbsp salt
2 tbsp white vinegar
1/2 cup water
2 tbsp crushed unsalted peanuts (optional)
chilli flakes (optional)
Instructions
  • Place all ingredients into a medium sized saucepan
  • While whisking, gently bring to a boil
  • Simmer sauce (low heat) for approximately 5 minutes
  • Remove from heat to cool
  • Garnish with additional crushed peanuts
  • Enjoy!
