Delicious and simple recipe for Apple Oatmeal cookies.  A nice change from other popular apple recipes such as pies and muffins.

Ingredients
3/4 cup butter softened / canola oil (equal parts)
2 eggs
1 1/2 tsp vanilla
1/2 cup brown sugar
1 cup sugar
1 3/4 cups whole wheat flour
1 tsp baking soda
1 1/2 tsp ground cinnamon
1/2 tsp salt
2 cups oats
1 1/2 large apples, peeled and grated
Icing (optional)
1 cup icing sugar
1 1/2 tbsp apple juice (or milk/water)
Instructions
  • Preheat oven to 375F
  • Using a large bowl beat butter, oil, eggs, sugar, brown sugar, and vanilla until mixed well
  • In a separate bowl mix flour, cinnamon, salt and baking soda until mixed well
  • Gradually add dry ingredients to the wet mixture and blend
  • Add oats and grated apple continue to mix
  • Using a parchment covered cookie sheet spoon approximately 1 tablespoon of dough onto cookie sheet
  • Bake for about 10-12 minutes
  • Remove from oven and allow to cool a couple of minutes before placing on cooling racks
  • To drizzle icing on the cookies mix icing sugar and apple juice and whisk until spoon.  Drizzle or using a small plastic bag pour icing into the bag and cut a small corner and "pipe" the icing over the cookies and allow to cool.
