Maurin Cuisine
4 Chicken legs or chicken breasts, you decide what you prefer, but cook only one or the other as they cook at different times
1 lb Potatoes of your choice
2 shallots sliced at same thickness
1 lb Kale with stems removed and chopped big
1 Garlic clove, chopped
1 tbsp Fresh thyme
1/3 cup Chicken stock
Paprika or chili powder
Salt & Pepper to taste
Olive oil
  1. Pre-heat oven at 450 degrees
  2. In roasting pan toss kale, potatoes, onion, garlic with olive oil, thyme and salt & pepper to taste
  3. Toss chicken with olive oil, salt & pepper to taste and your choice of chili powder or paprika and set on top of potato mix
  4. Bake for 20 minutes covered, add the chicken stock and cook for another 30 minutes uncovered or until cooked through
  5. Enjoy!
