Spicy Peach & Chilli Chicken

Delicious recipe for a spicy chicken dish with a sweet and fruity twist. Check out the recipe for the Peach Conserve.

4 Chicken breasts or 8 boned chicken thighs
2 Tbsp Oil (lighter the better)
4 Garlic gloves, minced
2 oz Palm sugar – worth looking for in the store
1 Tsp Ground turmeric
1 Red chilli, seeds removed and finely chopped
2” Fresh ginger finely grated
3 Tbsp Fish sauce
Juice of 2 limes
4 Tbsp Peach conserve
Shredded spring onion
Fresh mint
Chopped peanuts
  1. Combine sugar, turmeric and 3 tbsp of water into a small saucepan and heat slowly for 2-3 minutes stirring until the sugar is dissolved
  2. Add chilli, ginger, fish sauce, lime juice and peach conserve and increase the heat and bubble for a few minutes until golden brown sauce
  3. Cut chicken into bite-sized pieces
  4. Heat oil in a large frying pan or wok and sauté the chicken with the garlic for 3-4 minutes until cooked through
  5. Pour the chilli peach sauce and let it bubble for another 2-3 minutes
  6. Serve with rice sprinkled with shredded spring onions, mint and peanuts
  7. Enjoy!
