This is the best chili recipe you will find with great flavours and even low-carb/keto friendly.  Instead of kidney beans try diced carrots and save on the carbs.

1 tbsp Olive oil
1 lb Lean ground beef
1 Large onion - diced
1 Red pepper - diced
2-3 Carrots - diced
3 Garlic cloves, minced
1 Jalapeno peppers, chopped finely
1 1/2 tbsp Chili powder
2 tsp Ground cumin
2 tsp Paprika
1 tsp Chipotle powder
1/4 tsp Cayene pepper
1 tbsp Tomato paste
398 ml can Fire Roated Tomatoes diced (can subsitute regular)
1 1/2 cups Beef broth
398 ml can Tomato sauce
1 tsp Salt
  1. Using a large pot or Ducth oven add olive oil over medium-high heat
  2. Brown ground beef
  3. Removed ground beef and add onions, red pepper, garlic, carrots and Jalapeno pepper.  Saute for about 5 minutes on medium heat
  4. Add ground beef back to pot
  5. Add chili powder, cumin, paprika, chipolte powder, cayene pepper and tomato paste - stir well
  6. Add diced tomatoes, tomato sauce, beef broth and salt - stir well
  7. Cover and simmer for 30 minutes.  Tip - the longer you simmer the better it will taste.
  8. Serve and enjoy with your favourite garnishes such as avocado, sour cream, grated mild cheese or cilantro
