Simple baked frittata recipe that can be served for brunch or dinner along with a salad.

Ingredients
4 eggs
1/4 cup milk or cream
1 tbsp butter
2 green onions chopped
¼ parmesan or swiss cheese
1/3 ham chopped
¼ cup asparagus chopped
½ cup sliced mushrooms
½ cup frozen hash brown potatoes
1 ½ cups fresh baby spinach
1 Salt & pepper to taste
Instructions
  1. Pre-heat oven to 350F
  2. Heat butter in a skillet over medium heat
  3. Add green onions, ham, asparagus, mushrooms, potatoes and spinach and sauté until tender
  4. In a large bowl beat eggs along with milk and salt & pepper
  5. Add vegetable mixture from skillet to eggs and stir
  6. Add cheese
  7. Spray a shallow baking dish with cooking spray
  8. Pour mixture into baking dish
  9. Sprinkle with some cheese if desired
  10. Bake uncovered for approximately 20-25 minutes until frittata is firm in the center
  11. Enjoy
