Serves 4

This is an extremely easy and delicious recipe for the Spanish dish Paella. Give it a try, you will be surprised!

2 Boneless chicken breasts cut into bite size pieces
2 Italian sausages, cut into 1/2 inch pieces
1 lb Fresh shrimp
142g tin Clams – or fresh
1/3 cup Olive oil
1 Red pepper diced
2 Onions, chopped
4 Garlic cloves, minced
1 Red chili pepper finely diced
1 Tsp Paprika
1 Tbsp Fresh rosemary
3 Bay leaves
1 ½ cups Roma tomatoes diced
2 cups Arborio rice
3 cups Chicken broth
1 cup White wine
1 Tsp Saffron threads, crushed
Fresh parsley to garnish
  1. Heat 3 tbsp oil in large skillet or 15-inch paella pan on medium-high heat on stovetop
  2. Add chicken pieces and sausage and lightly brown for about 5 minutes. Remove from skillet
  3. Add 2 more tbsp oil
  4. Add onion, pepper and sauté for 2 minutes
  5. Stir in garlic, paprika and rosemary. Sauté for 1 minute
  6. Add 1 tbsp oil
  7. Sprinkle rice into pan. Sauté, stirring frequently for two to three minutes or until coated with oil
  8. Stir in tomatoes and chopped chili pepper and season
  9. Add 3 cups chicken stock and 1 cup of white wine along with saffron and bay leaves
  10. Bring to boil then reduce heat to medium, return chicken, sausage and add shrimp and clams and stir into rice
  11. Bring to a simmer and cook over medium heat until the liquid has absorbed and the rice is tender, about thirty minutes
  12. Serve garnished with parsley
