Zucchini-Lemon Muffins

Delicious simple zucchini muffins with lemon are full of flavor, healthy, low in cholesterol and good source of fiber.  A great way to use the abundance of summer zucchinis.

Ingredients
2 cups whole wheat flour
1/2 cup sugar
1 tbsp baking powder
1/4 tsp salt
1/2 tsp ground nutmeg
3 tsp grated lemon rind/zest
1 cup shredded zucchini (inlcuding peel)
3/4 cup milk
3 tbsp canola oil
1 egg
Instructions
  1. Pre-heat oven to 400F
  2. Combine flour, sugar, baking powder, salt, and nutmeg and blend well
  3. Add lemon rind and blend in
  4. In a separate bowl add egg, zucchini, milk and oil and mix well
  5. Gently add the dry mixture to zucchini mixture and mix until integrated.  Do not over-mix.
  6. Spoon into muffin baking tray to make 12 muffins
  7. Bake for 20 minutes until brown
  8. Remove from pans and let cool
  9. Enjoy!
