These deliciously moist, tasty and nutritious pumpkin muffins are easy to prepare and perfect to get you in the fall spirit.

Ingredients
200 ml pumpkin puree
1 cup sugar
1 cup canola oil
1 egg
3 tsp vanilla
2 1/2 cups flour (whole wheat preferred)
1/2 cup milled flaxseed (or 1/2 flour)
1 tbsp cinnamon
1/2 tsp nutmeg
1/4 tsp all spice
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
Instructions
  • Preheat oven to 350F
  • In a large bowl mix the pumpkin, oil, egg and vanilla
  • Add remaining ingredients to the pumpkin mixture and stir until combined.  (best if dried ingredients are blended before adding to pumpkin)
  • Spoon into greased muffin tin yielding 12 muffins
  • Sprinkle with sugar
  • Bake for approximately 30 minutes
  • Enjoy!
