Greek Style Rice with Spinach

Excellent party warm/hot side dish that always pleases!

Ingredients
1 ½ tbsp Olive oil
1 large onion chopped
1 1/3 tbsp minced garlic
4 cups fresh spinach - chopped (baby spinach is the best)
3 tbsp fresh lemon juice (never use bottled lemon or lime juice)
4 cups cooked long grained rice
2-4 tbsp basil chopped (I prefer the extra basil)
Salt and pepper to taste
¼ - ½ cup Feta cheese crumbled (I also like the extra cheese)
Instructions
  1. Heat oil in a large pan
  2. Add onion and garlic and cook on medium-high heat until onion is softened and transparent – be sure not to brown and overcook!
  3. Add spinach, lemon juice and rice; cook, stirring frequently, until spinach is limp and rice is heated.
  4. Add basil and toss adding salt and pepper to taste.
  5. Place rice on a large serving platter and sprinkle with feta cheese.
