Creamy Lemon Garlic Chicken

A delicious and light creamy lemon garlic chicken.  Simple to make that is sure to please.

An excellent variation for chicken that can be served with your favourite vegetables.

Don't hold back on the garlic, you will be surprised how subtle the garlic tastes in this dish.

1 1/2 lbs Chicken thighs, skinless, bone removed
1/4 tsp Ground black pepper
2 tbsp Olive oil
12 garlic cloves
3/4 cup Chicken broth, low sodium preferred
1/4 cup Cooking cream
1 Lemon, sliced and cut into small wedges
1/4 tsp Cayenne pepper
1/4 cup Japanese cooking sake
2 tbsp Mirin
1/8 tsp Salt
1 tsp Sugar
1 tbsp Italian parsley, chopped
  1. Season chicken with salt and pepper
  2. Heat 1 tbsp olive oil in a skillet
  3. Gently saute chicken until both sides become nicely browned
  4. Remove chicken from skillet and set aside
  5. Add remaining 1 tbsp of olive oil to skillet along with garlic cloves
  6. Saute garlic until lightly browned, careful to not burn
  7. Add chicken broth, cream, lemon slices, cayenne pepper, sake, mirin, salt and sugar (hint: mix this in advance before preparing other items)
  8. Simmer sauce for few minutes then add cooked chicken to the mixture and allow to gently simmer for about 15 minutes
  9. Add parsley and stir well
  10. Serve with your favourite vegetables
  11. Enjoy!
