Spicy Asian Chicken Soup with Noodles

A delicious Asian soup that is restaurant quality and more.  Adjust ingredients to your preference but this was a huge success as described.

The broth has a lot of flavour and allowing to simmer a little bit longer will allow all the ingredients to come to life.

Ingredients
3 cups Chicken broth - low sodium preferred
1 1/2 cups Water
2 tsp Hot chili sauce (ie: Sriracha)
2 tsp Soy sauce - low sodium preferred
1 1/2 tsp Thai red curry paste
2" Ginger, peeled and cut into large chunks
1 Red chili, deseeded and finely chopped
1 1/2 cups Chicken breast, cooked and shredded
1/2 cup Carrot, grated
1/2 cup Mushrooms, sliced thin
1/2 cup Snow peas, sliced thin
1/4 cup Green onions, sliced thin
1/4 cup Coriander (Cilantro), chopped
1/4 cup Mint, chopped
4 oz Rice noodles (wide), uncooked
Instructions
  1. Add all ingredients to a pot except green onions, coriander (cilantro), mint and noodles
  2. Bring soup mixture to a simmer and allow to simmer for approximately one hour to allow all flavours to combine
  3. Remove ginger pieces
  4. When ready to serve prepare and cook noodles and strain
  5. Divide noodles into four bowls
  6. Ladle soup mixture and broth over noodles
  7. Garnish with green onions, coriander (cilantro) and mint
  8. Enjoy!
