Moroccan Spiced Bulgur Salad

This Moroccan salad is full of fresh flavours.  An interesting salad for entertaining.

Ingredients
200g bulghar wheat
250ml vegetable stock
1/2 red onion, thinly sliced
700g chick peas
200g roasted peppers, cut into strips/cubes
1/2 cup corriander, chopped
1/4 tsp ground cumin
1/4 tsp ground cinnamon
1 lemon zest and juice
1 tbsp olive oil
Instructions
  1. In a larger bowl add bulgur wheat
  2. Add 250ml of hot vegetable stock on cover with plastic wrap
  3. Place in microwave and cook on high for 4 minutes
  4. Remove and set aside for an additional 5 minutes
  5. Meanwhile prepare dressing in a small dish by combining lemon zest, juice of lemon, olive oil, ground cumin and cinnamon
  6. Add onions, chickpeas, peppers and coriander to bulghar mixture and stir to combine
  7. Add dressing and continue to combine
  8. Serve either warm or cold
  9. Enjoy!
