Tortellini with Mushroom-Sage-Vermouth Sauce

Delicious, quick and easy pasta dish that is sure to please your family and friends.

Ingredients
350g of your favorite tortellini (cheese, mushroom, chicken, etc), or if you prefer fettuccine
3 tbsp butter
1/4 cup chopped green onions (including greens)
6 ounces fresh shiitake mushrooms, stems removed, caps thickly sliced
1 cup baby spinach (optional)
7 oz dry vermouth or dry white wine
5 oz whipping cream
1 1/2 tbsp chopped fresh sage
Instructions
  1. Cook pasta in pot of boiling salted water according to package directions; drain
  2. Melt butter in heavy large skillet over medium-high heat
  3. Add shallots/green onions and sauté for approximately 1 minute
  4. Add mushrooms and sauté until brown, approximately 7 minutes
  5. Add vermouth and cream and let boil until sauce thickens slightly, approximately 5 minutes
  6. Stir in sage and pasta and heat through
  7. Season with salt and pepper as desired
  8. Serve and garnish with a couple fresh leaves of sage
  9. Enjoy!
Tips
  • Try adding cooked chicken, ham, bacon, or smoked salmon
  • For a creamier sauce adjust to 1 1/4 cups of vermouth and 3/4 cup whipping cream - this makes it even more delicious!
  • Other vegetables such as peas, snow peas etc is a great option
  • Sprinkle some parmesan cheese on top when serving
  • Don't be afraid to add more sage, tastes amazing!
