Blackberry Ribs

A delicious rich sticky, sweet recipe for ribs with a nice bit of a kick.  Great for the BBQ or prepared under the grill in the oven.

Ingredients
3 lbs Pork or beef ribs
2 tbsp Chilli powder
1 tbsp Dry mustard
3 cloves garlic, minced
¾ tsp Salt
¾ tsp cinnamon
½ cup Blackberry jam or 1 1/2 cups fresh blueberries
¼ cup ketchup
1 tbsp Balsamic vinegar
2 tsp minced ginger
¼ tsp Pepper
Instructions
  1. Preheat oven to 325F
  2. In a shallow roasting pan pour ½ inch water
  3. Add ribs meat side up
  4. Cover and cook in oven for 90 minutes
  5. After 90 minutes remove ribs and let stand on cutting board for 10 minutes
  6. Cut individual rib portions and set aside
  7. In a large bowl combine chilli powder, mustard, garlic, salt and cinnamon
  8. Rub mixture well over the ribs and place ribs in the bowl
  9. Cover and refrigerate for at least 4 hours. Can also be prepared the day before and refrigerate up to 24 hours
  10. For the sauce, in small saucepan, combine blackberry jam, or blueberries, ketchup, vinegar, ginger and pepper; bring to boil
  11. Reduce heat and simmer, stirring often, for 5 minutes. Be sure to press any berries to provide a smoother sauce
  12. Set aside or prepare early and refrigerate covered up to 24 hours before
  13. On the BBQ place on grill meaty side down and grill or if prepared in the oven place ribs, meaty side down, on rack on foil-lined baking sheet. Broil for 5 minutes.
  14. Brush ribs with half of the sauce
  15. Turn ribs and brush with remaining sauce
  16. Continue to BBQ a few more minutes or under the grill for 5 minutes
  17. Serve and Enjoy!
