Turkish Lentil Soup

Following a recent trip to Turkey discovered how delicious lentil soup can be. This soup recipe is so quick, easy and delicious. Don’t forget the great health benefits of lentil soup also!

Ingredients
1 Medium onion chopped
1 Carrot chopped
1 Tomato chopped
1 Medium potato cubed
1 Tbsp Tomato paste
1 Tbsp Fresh mint
2 Tsp Dried mint
1 ½ cups Red lentils rinsed
4 cups Chicken stock
4 cups Water
1 Tbsp Olive oil
1 Tbsp Butter
Instructions
  1. Melt the olive oil and butter in a large pot over medium heat
  2. Add onions, carrots and potatoes and sauté until the onions are translucent, about 3-5 minutes
  3. Add the tomato paste and stir
  4. Add the tomatoes, fresh and dried mint, lentils, chicken stock and water
  5. Bring to a boil then cover and reduce the heat to medium simmering for about 20 minutes
  6. After 20 minutes remove 1 ½ cups of the soup and set aside
  7. Using blender, blend remaining soup until smooth and add back to pot along with unblended soup
  8. Salt to taste as desired
  9. Serve with your favorite bread and a sliver of lemon to squeeze on top
  10. Garnish with crushed mint, couple fresh mint leaves and some paprika for color
  11. Enjoy!
