Mussels with Chilli and Tomatoes

A fantastic and easy meal with a nice little spicy “kick”. Be sure to serve with your favourite bread so you don’t miss a drop. !

Ingredients
1 kg mussels, cleaned
2 tomatoes
2 tbsp olive oil
1-2 garlic cloves chopped finely
1 green onion chopped finely
1 red chilli chopped finely
1 cup dry white wine
1 tsp tomato paste
1/8 tsp sugar
2 tbsp cilantro, chopped
Instructions
  1. Peel skin from tomatoes by placing in a bowl and covering tomatoes with boiling water for 3 minutes. Remove from water and peel.
  2. Quarter tomatoes and remove seeds
  3. Chop tomato skin
  4. Heat oil in a large saucepan with a lid
  5. Add garlic, green onion and chilli and fry for 2-3 minutes on a medium heat until softened
  6. Add wine, tomatoes (including skin), paste and sugar
  7. Simmer for a couple of minutes
  8. Add mussels and cilantro and stir well
  9. Cover tightly for about 4 minutes allowing mussels to be steamed until mussels have opened
  10. Remove from heat and serve along with sauce. Do not serve any mussels that are not open
  11. Garnish with cilantro
  12. Serve with your favourite bread
  13. Enjoy!
