A delicious versatile Malaysian dish that is so simple to prepare.  "Mamak" as it is used in Malaysia refers to the Indian-Muslim community bringing amazing flavours together.  This dish is versatile to be prepared with or without chicken and therefor a great vegetarian option.

Ingredients
1 chicken breast, boneless, thinly sliced (optional for vegetarian)
3-4 dried chilies
3 tbsp cooking oil
2 garlic cloves, minced/chopped
227g yellow asian noodles (similar to size as spaghetti), cooked and drained
150g fried tofu, cubed
2 green onions, chopped
2 tbsp soy sauce
2 tbsp Ketjap Manis (dark soy)
3 tbsp tomato ketchup
1 large handful beansprouts
1 egg (optional)
1 lime
Instructions
  • Using a food processor blend/grind the chilies
  • Add 3 tbsp oil and continue to blend another minute.  If too thick add 1 tbsp water
  • Heat a wok or large frying pan and add a tablespoon of oil
  • Add garlic, green onions, chili/oil mixture, fried tofu and chicken
  • Continue to stir until chicken is cooked through
  • Add yellow noodles and stir
  • Add soy sauce, ketchup manis and tomato ketchup and continue to stir until mixed well
  • Push mixture to the side of wok/pan and add a drop of oil and break in the egg and scramble then stir into noodles
  • Add beansprouts and stir for another minute
  • Add juice of one lime and serve
  • Enjoy!
Tips

Try adding shrimp as well!

As for the chilies you will have to adjust to your level of tolerance to the spicy heat.  If not sure start of with 3 chilies and increase next time.
