Chicken and Sun-Dried Tomato Cream Sauce

A delicious dish that is simple to make and is sure to impress everyone.  Serve with your favourite vegitables.

Tip: Prepare all ingredients and have ready.

1 lb ( 2 breasts) Boneless chicken breasts - sliced lengthwise
1/4 tsp Salt
1/4 tsp Ground pepper
1/2 cup Sun-dried tomatoes, roughly chopped
1/4 cup Shallots, chopped finely
1/2 cup Dry white wine ( a bit extra never hurts)
1/2 cup Heavy cream (35%)
2 tbsp Italian parsley, chopped
1 tbsp Oil from sun-dried tomatoes
  1. Slice chicken breast in half lengthwise to create cutlets
  2. Season with salt & pepper
  3. Using a large skillet heat sun-dried tomato oil over medium heat
  4. Place chicken in pan and cook until nicely browned on each side
  5. Remove chicken from skillet and set aside
  6. Add sun-dried tomatoes and shallots to the skillet and saute for 1 minute
  7. Increase heat to high and add wine stiring until wine has reduced to a quarter
  8. Reduce heat to medium and add cream and stir.  If there are any juices from the chicken you can also add.
  9. Place chicken back in skillet and coat with the sauce
  10. Top with parsley
  11. Serve and enjoy!
