Blueberry Pie

So simple and delicious! Perfect pie when blueberries are in season.

Ingredients
3 Pie Blueberries
2 Pints flour
1/4 cup Sugar
1/8 cup Cornstarch
1/2 Tbsp Fresh lemon juice
1 Tbsp Unsalted butter, cut into smaller pieces
1 Egg
Instructions
Place blueberries in a large bowl (minus ½ cup of berries).
Crush 1/2 cup of berries and add to the full berries
Add sugar, cornstarch, and lemon juice and stir well to blend all ingredients
Pour mixture into chilled pie shell
Dot with butter
Place second pie shell over blueberry filling
Crimp the edge of top/bottom dough with your fingers to seal the edge
Using a knife cut 3-4 vents in top of dough to allow steam to escape
Whisk egg and brush top surface of the pie with the egg wash
Lightly sprinkle sugar on the top surface. Vanilla/Lavender sugar is delicious if available
Freeze or refrigerate pie until firm, about 30 minutes
Preheat oven to 400F
Place pie on a lined baking sheet
Bake until crust begins to turn golden, about 20 minutes
Reduce oven temperature to 350F
Continue baking approximately 40-50 minutes until crust is deep golden brown and juices are bubbling
Remove from oven a let pie cool
Enjoy!
