Good old English traditional recipe for Bakewell tarts. Very simple and easy!

375g flour
225g unsalted butter
75g sugar
3 eggs
1 tsp raspberry conserve
150g Unsalted butter (room temperature)
3 Eggs
1 Egg yolk
150g Ground almonds
1 zest of one lemon
  1. Preheat oven to 350F
  2. To make the pastry cut in flour, sugar and butter well
  3. Add 3 eggs and mix until dough comes together
  4. Roll out and cut 24-36 round discs and place in muffin tins
  5. OR better than making the pastry buy the pre-made. Just as good and much easier
  6. Now prepare the cake filling ……
  7. Beat 3 eggs and 1 yolk
  8. Cream butter and sugar
  9. Gradually add beaten eggs to butter and sugar
  10. Slowly add ground almonds and lemon zest and blend well until smooth
  11. Add 1 tsp raspberry conserve to the bottom of each tart
  12. Carefully spoon cake mixture over raspberry conserve to the top of the tart edge
  13. Bake for 20-25 minutes until browned
  14. Drizzle icing to finish if you desire
  15. Enjoy!
