Good old English traditional recipe for Bakewell tarts. Very simple and easy!

Ingredients
375g flour
225g unsalted butter
75g sugar
3 eggs
1 tsp raspberry conserve
150g Unsalted butter (room temperature)
3 Eggs
1 Egg yolk
150g Ground almonds
1 zest of one lemon
Instructions
Preheat oven to 350F
To make the pastry cut in flour, sugar and butter well
Add 3 eggs and mix until dough comes together
Roll out and cut 24-36 round discs and place in muffin tins
OR better than making the pastry buy the pre-made. Just as good and much easier
Now prepare the cake filling ……
Beat 3 eggs and 1 yolk
Cream butter and sugar
Gradually add beaten eggs to butter and sugar
Slowly add ground almonds and lemon zest and blend well until smooth
Add 1 tsp
raspberry conserve
to the bottom of each tart
Carefully spoon cake mixture over raspberry conserve to the top of the tart edge
Bake for 20-25 minutes until browned
Drizzle icing to finish if you desire
