Chicken Tikka Masala

This delicious spicy comfort food beats any restaurant.  Easy, simple, fast and delicious.  Garam masala gives this dish it's classic Indian taste.

Ingredients
400 g chicken breast, boneless and cubed
1 red chilli, deseeded
1-2 cloves of garlic
1 tbsp ginger, grated
1 tbsp canola oil
1/4 tsp paprika
1/2 tbsp garam masala
1/8 tsp ground cinnamon
1/8 tsp ground coriander
1/8 tsp tumeric
1 tsp tomato paste
1 tbsp fresh coriander, chopped
1 small onion, diced
1/2 red pepper, chopped
1/2 green pepper, chopped
400g plum tomatoes, fresh or canned
150ml plain yogurt
Instructions
  • Cube chicken and place in a bowl
  • Using a food processor add chilli, garlic, ginger, canola oil, paprika, garam masala, ground cinnamon, ground coriander, tumeric, tomato paste and fresh coriander.  Process until a paste has been created
  • Add paste to cubed chicken and coat well
  • Cover and refrigerate for a few hours.  It is preferable to marinate over night if time permits.
  • Once chicken has marinated add a tablespoon of canola oil to a large saucepan
  • Saute onions, red pepper and green pepper for about 5 minutes
  • Add tomatoes and yogurt and stir
  • Add chicken and stir well
  • Cover and simmer stirring occasionally for 1 hour allowing chicken to cook and spices to blend through
  • Serve with your favourite rice garnished with fresh coriander and fresh naan bread
  • Enjoy!
Tips

* This can be prepared without marinating but allowing spices to marinate with the chicken will provide a deeper richer flavour.
